Yes, You Heard Right, Caviar and Cannabis

We use a sweet caramelized onion dip as the vessel for the bud, then choose your own adventure by either spreading the caviar and cannabis onion dip on brioche toast or dipping potato chips and spooning a generous amount of caviar on top. 

Cannabis and caviar may seem like an unlikely pairing, but when they come together in this caramelized onion dip recipe, the result is surprisingly delicious and indulgent. 

The base of the dip is made from caramelized onions, sour cream, and mayonnaise, which combine to create a rich and savory flavor that’s perfect for dipping.

What is the difference between Caviar and Roe?

At its core, caviar and roe are the same thing, salted fish eggs. 

In the restaurant industry, however, the two terms are used to distinguish fish eggs originating from sturgeon, caviar, and eggs coming from a variety of species, roe. Fish eggs come in all shapes and sizes, for this recipe, we’ll be highlighting the classic little black caviar of the sturgeon and the big bright orange salmon roe.  

Both caviar and salmon roe pair well with the dip. Salmon eggs are bigger and pack a bigger punch of ocean flavor that stand up to the flavorful infused cannabis dip.

What Bud Should We Pair For Caviar and Cannabis Dip?

The salty fish eggs will do well with a citrusy pairing, one that will compliment caviar’s delicate briny flavor and won’t overpower it. I find that strains that have a good amount of limonene work perfectly.

Using the strain finder we can search for strains that contain limonene, a type of terpene found in marijuana that happens to be the same compound produced by citrus. Lemon Haze and Mimosa both have these citrus notes.

Things will get fancy this weekend when your friends see this special caviar and cannabis onion dip you just made! 

Ingredients

  • 1 tin of caviar or salmon roe (30 grams)

  • 330 grams chopped yellow onion (about 3 small onions)

  • 1 teaspoon salt

  • â…“ cup water

  • 1 tbsp olive oil

  • 2 tbsp cannabutter

  • 200 grams sour cream or crème fraîche

  • 40 grams mayonnaise

  • Dash of white pepper

  • 1 tbsp finely chopped chives

  • 3 Slices of Brioche or Bag of Plain Potato Chips (ideally fried in 100% olive oil)

Instructions

  • Start cooking the onions : peel, and finely slice your onions. Add to a sauté pan along with the salt and water*. Bring the temperature to medium-high, cover with a lid, and let it cook down for 20 minutes. Stir occasionally.
  • Caramelize : After the 20 minutes are up, uncover the pan and add the olive oil and a tablespoon of the cannabutter. Lower the heat to medium, leave uncovered, and start stirring. The onions will already be tender and will slowly begin to turn golden. Cook for another 20 minutes, when the onions are golden and taste sweet they are done. Add the rest of the cannabutter, stir thoroughly, and turn off the heat to let cool.
  • Prep the rest of the ingredients: finely chop your chives and measure out the sour cream, mayonnaise, white pepper, and half of the chopped chives into a medium bowl.
  • Mix : once cooled, add the onions and mix thoroughly with the rest. Garnish the dip with the remaining chives.
  • Serve and Enjoy! the dip with toasted brioche toast rounds or directly dip chips for a satisfying crunch and top with your choice of caviar or roe.

Notes

  •  The water is going to cook down the onions quicker and without having to add a ton of oil. Remember to start with a low dose of Cannabis Extract and gradually increase as needed to find the perfect amount for you.
